Nancy E. McDonald, Director of R & D



Nancy is the group’s Director of R & D. She works across the entire product portfolio and manages research and development, formulation, flavor chemistry, laboratory, quality control and is also in charge of sensory training and education of our staff and food safety in general.

Nancy has over twenty years of experience as a food scientist and food chemist, working for the Coca Cola Company, one of the world’s leading food companies. At Coca-Cola Nancy was directly involved with the inception and development of some of the company’s most successful products which are currently yielding in excess of $376,000,000 in profits per year. Those products include Minute Maid Orange Passion, Orange Cranberry, Fruit Punch, Cranberry Apple, Cranberry Apple Raspberry, Lemonade Iced Tea, Hi-C Berry Punch, Hi-C Berry Blast, Bacardi Strawberry Daiquiri and many more.

After leaving The Coca-Cola Company, Nancy has developed products for Kroger, WalMart, Albertson’s, Darden Restaurants, Road House Grill Restaurants, Sun Orchard Tavern Cocktail Mixes, and has provided sensory training and trouble shooting for major flavor and food companies such as Givaudan, Dragoco, Firmenich, Danisco, Bacardi, Louis Dreyfus, Tropicana and The Coca-Cola Company.

Nancy received her Science Degrees from the University of Central Florida graduating with honors. Her graduate courses were taken at the University of Florida. She is a member of the Phi Theta Kappa, Phi Kappa Phi and Delta Tau Kappa Honor Societies. Nancy teaches Food Safety Programs such as HACCP, Food Safety Management Systems, Internal Auditing, ISO 22000 and PAS 220. She consults many of our clients in Food Safety Certification, SQF and BRC GFSI programs.

Nancy is an active member of the Institute of Food Technologists and the American Chemical Society. She has served as Chairperson and Secretary of the Florida Section Institute of Food Technologists. In 2004, she received the Bob Olsen Award for her service to the Florida Section IFT. In 2007, she received the Distinguished Service Award from the Institute of Food Technologists.

Nancy is a native of Valdosta, Georgia. She and her husband Burt live in Paisley, Florida on their farm.
